SOULer Food Traditional Sudanese Molokhiya Stew

Ingredients: (portion size depends on thickness of molokhiya required)

  • Solar’s dried Molokhiya leaves (Jew’s mallow)
  • Solar’s dried powdered garlic/garlic chips
  • Vegetable oil
  • Solar’s dried onions
  • Water
  • Meat
  • Spices (salt, coriander, black pepper)


  • Fry some oil in a pressure cooker and add onions until soft. Flip around the pan but do not let it turn brown
  • Add meat to mixture, in addition to water, salt and coriander and leave on medium heat for 20-30 minutes
  • With a wooden spoon, or a Sudanese “mofraka”, stir until onion melts in the mixture
  • Add grinded molokhiya leaves to the pressure cooker and add black pepper. Leave to cook for 15 minutes
  • On a separate pan, heat some oil then add powdered garlic or garlic chips and stir for 3 minutes
  • Pour the garlic mixture over the pressure cooker mixture, stir for a minute then turn off the heat
