SOULer Food Traditional Sudanese Red Tagaliya Stew

Ingredients:

  • 3 tablespoons Solar dried meat
  • 3 tablespoons Solar powdered onion
  • 2 cups water
  • Half a mug vegetable oil
  • Spices (cardamom, cinnamon, coriander, salt, pinch of pepper, okra)
  • 1 cup tomato juice (or blend water + Solar dried tomatoes)
  • 1 cup tomato paste

Directions:

  • In a pressure cooker on a medium fire, add some oil and add the dried meat, onions and tomato juice and fry but do not let the mix turn brown
  • Add 2 cups of water
  • Leave to boil then add tomato paste
  • Add pepper, cardamom and coriander
  • Leave on low heat until mixture gets thicker and cooks
  • Take the oil on top of the mixture and pour on a separate pan for later use
  • Add two cups of water and leave to boil
  • Add coriander gradually and stir lightly until mixture mixes well & begins to boil
  • Leave on low heat for three minutes and turn off heat
  • Add the separated oil on the pan and pour it on top of the stew for presentation
